Jim's Just Fine Omlet

2 eggs
1/4 cup milk
1/4 cup of ham chopped into small
pieces
1 slice of cheese

Use a small to medium sized frying pan. Melt 1 tsp.
butter in pan over medium heat. Break 2 eggs into a small
bowl and add milk. Stir well. When eggs and milk are mixed,
pour into pan and do not stir mixture any more.

Let mixture cook over medium heat until eggs become
done on bottom and firm on top. You can tell when it is at
this point by watching the edges of the mixture. The eggs
will bubble and you will be able to tell that the edges are
done. The bottom of the eggs will be partially brown.

When eggs are almost firm on top add the ham.
Sprinkle the ham over 1/2 of the eggs only. Now tear the
cheese into pieces and put on top of the ham. Salt and
pepper to taste.

Eggs should now be firm. Use a spatula and reach
under the half that does not have the ham and cheese on it
and fold it over the half that does. Let mixture cook over low
heat for a minute or two longer to heat ham and cheese.
Serve with toast and juice.

Fast & Furious Doughnuts

1 cardboard tube of any kind
of biscuits

You will need one of those little-deep fat fryers or a small sauce pan half filled
with oil. Turn heat up to medium high. oil will be hot enough when you drop a little
piece of biscuit in and it immediately floats on top and boils.

While waiting for oil to heat, separate biscuits into individual patties. Now find
something to cut a hole in the middle with. I use a cap from a bottle of Bourbon, but use
whatever you have. Take "holes" out of doughnuts and set aside.

Now just drop ready made doughnuts into oil and fry until golden brown. Drain
on a paper towel. Also pop the "holes" into the oil and fry them. Drain.

If you like, you can roll doughnuts in a little bit of sugar.
